Chicken Fried Steak

I buy meats in bulk and repackage them in threes for our family.  Since Lexi's friend Rhonda was over, I decided to create chicken fried steak strips to stretch my 3 servings to 4.  When I got the steaks out of the bag, I realized that I had thawed pork and not beef.  It was dark like beef, but looked more like pork.

So, I made the recipe using only half the ingredients for 3 - 4 servings instead of my intended 6-8.  I substituted olive oil for vegetable oil.  (I typically do, it just seems healthier)

Accompaniments:

Mashed Potatoes:  My dad has been growing potatoes this year and so we have home grown potatoes coming out of our ears.  Gerg peeled some and made mashed.

Cucumber Salad:  My neighbor also brought over some cucumbers.  I sliced them up, added a tomato, a couple of thin slices of radishes, and some ranch dressing.

Plums:  Found on sale.

Ratings:

Heidi--4 stars (a little oily)
Gerg--4 stars--but he wants me to cook more of it so he can pack it in his lunches
Lexi--5 stars--make this one again mom!
Rhonda--5 stars, but tomatoes are evil and plums are too difficult to eat with my braces

  1. Wow! Your picture looks really impressive! Whenever I try to take pics of food, they turn out really grainy, and I can't imagine that anyone would want to attempt to emulate whatever I have made. Yummy!
